Onion, celery, carrots, brown lentils, olive oil, ground turkey, garlic, Italian seasoning, paprika, pepper, kosher salt, canned diced tomatoes, chicken stock, fresh lemon juice.
Chop onions, celery, and carrots. Rinse brown lentils. Heat olive oil in a pot, add diced onions, and cook until softened.
Add celery, chopped carrots, and minced garlic. Push veggies to the sides, add ground turkey to the center, crumble and brown it.
Sprinkle Italian seasoning, paprika, pepper, and kosher salt. Add rinsed lentils, diced tomatoes, and chicken stock. Stir well and bring the soup to a simmer.
Let the soup simmer for 30 minutes, stirring occasionally. When lentils are tender, add fresh lemon juice.
Stir well, and your wholesome Turkey Lentil Soup is ready to serve.
