Ground beef, minced garlic, diced red onions, taco seasoning, diced tomatoes, tomato sauce, corn, black beans, corn tortillas, shredded cheddar cheese, fresh chopped cilantro.
Begin by browning ground beef in a skillet. Add minced garlic and diced red onions, cooking until translucent.
Sprinkle taco seasoning over the cooked beef and stir well. Continue cooking for two minutes, allowing flavors to meld.
Introduce diced tomatoes, tomato sauce, corn, and black beans to the skillet. Stir the mixture and let it simmer, enhancing the flavors.
Softening corn tortillas, layer six at the base of a greased baking dish. Spoon half of the beef mixture and top it with shredded cheddar cheese.
Place six more tortillas over the cheese layer and add the remaining beef mixture. Sprinkle more shredded cheddar cheese on top.
Bake until hot and bubbly. Garnish with fresh chopped cilantro. Let it rest for five minutes before slicing and serving. Top with sour cream and diced tomatoes.
