Boneless, skinless chicken breasts, chili powder, cumin, paprika, salt, pepper, olive oil, salsa, corn, black beans, shredded Colby Jack cheese, fresh chopped cilantro.
Butterfly and cut chicken breasts, creating thin pieces. Mix chili powder, cumin, paprika, salt, and pepper. Rub the spice mixture on both sides of the chicken breasts.
Heat olive oil in a skillet, cook chicken breasts for 3-4 minutes on each side until the internal temperature reaches 165F. Set aside the cooked chicken breasts.
Add salsa, corn, and black beans to the skillet. Stir well, cook until heated through. Return cooked chicken breasts to the skillet.
Spoon bean mixture over chicken breasts, sprinkle shredded Colby Jack cheese on top. Cover with a lid and continue cooking until the cheese melts.
Remove from heat, sprinkle fresh chopped cilantro on top. The tantalizing Santa Fe Chicken is now ready to serve.
